Expertise
The juice’s fruity and spicy aroma is best expressed in a Riesling wine glass, where it gives off notes of candied lemon and orange peel, nectarine, thyme, white pepper, slightly unri-pe banana, white almond and green olive. On the palate it is livened up by crisp and peppery acidity which keeps the sweetness suitably in check. The flavour is shaped by yellow fruit notes and delicate tan-nins which give the juice a velvety, creamy texture. A medium-bodied apple juice that offers a complex aroma, well-integrated sweetness and lively freshness. The fruity and spicy interplay of aromas is at its best when the juice is enjoyed straight, but fans of freshness can mix the juice 1:1 with sparkling water. This juice goes well with medium meat and fish dishes, and thanks to its creamy texture can stand up to cream sauces of all kinds: we re-commend pork tenderloin with a creamy mushroom sauce or lemon and salmon pasta with fresh peas. Thanks to its crisp acidity, Topaz is the perfect accompaniment to hearty terrines and pâtés but could also serve as an enjoyable counterpart to rich dishes such as risotto milanese made with marrowbone.
